Slim coconut pancakes with sauerkraut and mushrooms
One day I woke up in the morning, looked in the fridge and found eggs, sausage and sauerkraut. From before christmas but it still smelled and tasted well;) So, out of necessity, the idea for breakfast was born. Actually, this recipe is equally good for dinner. As you wish.
When I repeated this cooking variation I decided to put some pepper. I mean chilli. It came off well, seasoned, a bit Polish… a bit different :) I will make use of this recipe again for sure. Especially because of the numerous healthy attributes of sauerkraut.
put eggs into a bowl, add coconut milk and salt. Mix everything thoroughly. Gradually add coconut┬áflour. The dough should have the consistency of crepes’ one.
Preheat a frying pan. Grease lightly with coconut oil and fry small portions of dough so as to get thin pancakes.
Soak mushrooms in warm water and leave for a few minutes.
On the other pan fry the sliced sausage until it melts. Then add the julienned onions and grated garlic. Fry a minute. Then add the drained and julienned┬ámushrooms. Fry about 2 minutes.
At the end, add the chopped sauerkraut, salt and pepper. Reduce heat, cover the pan with a lid and fry for about 10 minutes.
When ready put the filling on pancake and wrap as you like :)
