Paleo coconut muffins

Initially, I planned to make paleo donuts, and I found a very nice recipe but I didn’t take into account the fact that in the US so-called donut maker is very popular while in Poland…not known. In my city I didn’t find even molds in a donut shape. But I decided to experiment and it ended up with… muffins. They’re very tasty and sweet despite the total lack of sweeteners :) So this is an ideal snack during the sugar detox. And pre-workout meal. Yesterday I ate three muffins before my chest workout and I guessI don’t need to say what happened next …? Okay, I had the power!

Donuts taste best with almond butter!

Preparation

Melt the coconut butter on a low heat. Mix together eggs (room temperature), milk and butter using blender, until creamy. Add the lemon juice and vanilla extract and blend again.

In a separate container, mix the dry ingredients and pour them gradually to the previously prepared cream, stirring constantly. At the end once again mix everything. Coconut flour is very absorbent so we should get a fairly thick dough.

Grease the muffin molds with coconut oil, pour the dough in and put them in the oven preheated to 170 – 180 ° C for about 15 – 20 minutes until crust is browned a little.
