Beef meatballs with tomato sauce (paleo)

A few days ago I decided to gather a set of recipes that can be successfully prepared for the next day (or several days) to the lunch box, and that will taste as good cold as warm. In the end, we do not always have a chance to heat up our lunch meals. This often happens to me when I need to spend half a day in my car going to some seminars. Such home-made food is so much better than some sandwich at a gas station or lunch at a roadside inn. Meatballs in tomato sauce is the first new recipe for the “lunchbox” category.


Mix all meatball components (including grated garlic and chopped coriander), so that they merge thoroughly. Form small balls (up to 4 cm wide). Fry in hot coconut oil until browned on each side. Stir or shake from time to time.

Mix the sauce ingredients together in a blender. Pour into the pan with fried meatballs and cook about 5 minutes more. If the sauce becomes too thick, pour some water.

Serve with grain free noodles or solo :)
